Grape variety:
Parellada (60%) and Xarel·lo (40%), traditionally produced according to the ancestral method, hand-picked, without additives – pure and unadulterated. The grapes come from 35-year-old vines planted on sandy-loam soils in Font-Rubí and Sant Martí Sarroca (Alt Penedès, Catalonia). Hand-picked on September 4th and 14th (fruit days), 100% crushed, 6 days of maceration in stainless steel tanks, spontaneous fermentation with wild yeasts, unfiltered and without sulfur, and aged for 6.5 months on the full lees.
Color:
Bright, clear gold with fine, natural perlage.
Taste:
Finely sparkling with delicate notes of pear, apple peel, and citrus fruit, underpinned by white tea, dried herbs, and a subtle yeast note. Delicate, lively, yet surprisingly profound – with a silky texture and an invigorating, slightly salty finish.
Fitness:
Ideal as a lively aperitif or with light dishes – goes wonderfully with marinated vegetables, goat's cheese or oysters with lime vinaigrette.
