DESCRIPTION

Grape variety:
Parellada, traditionally vinified with a two-week maceration period, hand-picked and without additives – pure and unadulterated. The grapes come from 35-year-old vines on sandy-loam soil in Font-Rubí, Alt Penedès (Catalonia), harvested on September 14 (fruit day). After complete destemming and crushing, fermentation took place in stainless steel tanks, spontaneously with wild yeasts, unfiltered and without sulfur – and it aged for 8 months on the full lees. Bottled on April 2 (fruit day).

Color:
Delicate golden yellow with a slightly cloudy shimmer – a clear sign of unfiltered craftsmanship.

Taste:
Delicate stone fruit aromas of white peach and pear, accompanied by grapefruit zest, fresh herbs, and a hint of fennel. The maceration lends depth and structure, the texture is both soft and grippy, and the finish is mineral and long-lasting with vibrant freshness.

Fitness:
A distinctive accompaniment to Mediterranean cuisine—excellent with grilled vegetables, artichokes, seafood, or aged goat cheese. A fascinating natural wine on its own, too, for curious palates.
